Was thinking about smoking the bellies. Anybody tried this?

Scott, i got bellies and collars and a few misc chunks in the Brine right now ill smoke on monday and let you know how it comes out.

I smoked some bellies and the skeleton yesterday and it came out OK but a little dry like smoked tuna. I would check it after 4-5 hours.

I love smoked bellies and retaiined the thick slab from yesterday's 16.16# ling.
No obvious parasites on that fish but the 14 pounder a few weeks back had a few snakes (worms) near the belly.

WSB and halibut seem to dry fast in  the smoker compared to salmon and tuna so I always use the little chief with just a little smoke. 

That brine is the key for preservation and looks but for dinner, I like wsb belly right out of the smoker so I just use a hint of marinade, if that.  Sooooo rich, I'm drooling like Homer thinking about it.

I'm really glad to hear you guys are hooking up.  I have some work in Malibu in 2 weeks. The bite has been there for months and I hope to get a shot at one.
