How 'bout just preparing the sashimi by freezing it? Is there anyone on the board that can walk us through that?

that my friend is a great alternative to cooking. this process is used around the world for preparation of raw fish for consumption. all you have to do is freeze at -4 degrees farenheit for 24-60 hours and the fish will be good to go.

soaking the meat in something does not work well and usually fails to kill worms.

anisakiasis is when someone consumes one of these worms it is imperative they have it removed. unless one is happy to host such a creature. it will dig into the stomach lining and make internal sores.

this info was from Milton Love's book called "Probably more than you want to know about the fishes of the Pacific Coast."

Thats definitely more than i wanted to know but good info either way.

I'll ask the guy at the Japanese grocery, he said it had to be frozen to a really low temp

Somebody else posted some info here a while back that creeped me out and I was thankful for it since I've been eating salmon I caught raw for such a long time Knowing what I do now I'd rather be creeped out in advance of being invaded

Speaking of creeped out I work in the local children's hospital and we had a little girl from Mexico who had the long ones crawling out of her. They'd migrated out of her intestinal tract and were in her lungs etc One night we found one coming out of la boca, another time I went in and found one crawling across the floor Different than the fishy variety but I think a lot easier to exterminate

  You folks are way to paranoid.  Enjoy life, I have already been bit in the heel by a 4ft. diamondback rattler in the Merced river canyon by Yosemite.  Life is short, enjoy.

Enjoy your halibut sushi, I've picked piles and piles of worms from those fish

But it aint the worms you can see it's the offspring that you can't see and if that's paranoia okay  Since a lot of people are looking at these boards it's worth mentioning that raw fish tastes good but raw fish especially halibut that wasn't frozen is asking for a lifetime of gruesome entertainments

Amongst my old beerdrinking/fishing friends I was the guy who could eat the most and biggest nightcrawlers Somewhere there are photos to prove it and a few of me eating salmon eyeballs about the size of a golfball right out of the fish and for years the hearts washed down with a little limoncino 

I've also eaten things in China and on my own dinner table that would rank on fear factor But after what I read about the parasites the freshrawfish days are over

Enjoy your halibut sushi, I know from personal experience that fish tastes better if you don't freeze it  But I trust the word of the Japanese grocer on this one

Flash Freezing fish first and then eating sushie is the way to prevent any 4 foot fish worms or any other parisites.

Thanks Mike, I will try it and let you know.  My mother is a marine microbiologist that works for Tenera.  My girls dad is the head of biology at  Cuesta College.  I will try your method, sounds great, Thanks!  The stripers are hitting on chovies at the lakes. Get on it.
