Nice, my buddy that I fish with has the 120 and they are pretty sweet. Faster and more stable than mine

I think my tarpon is a 2003-2004 model, and there have been a lot of improvements since then. WS builds good bopats, IME.

Why do I see a lot of kayak fisherman with milk crates in the back with rod holders? Just easier to store stuff in the back?

The milk crates are a very easily modified bucket for your ride. Just to keep your stuff while you get some more stuff, of the finned type. A lot of how to articles out there. Here is one to give some ideas.
