Here's a salmon pasta recipe that's easy, and tasty. You can use any part of the fish, but I used the meat from the collars/bellies and skeleton-yum. Combine some olive oil/brown sugar/white pepper/salt and anything else you want, and rub all over fish parts. BBQ for about 15-20 mins until done. Remove meat from the bones, etc. and set aside.

Add a tablespoon or two of butter and a half bag of spinach leaves to a large sauté pan on medium heat. When the spinach is reduced to half, add the zest of a lemon, salt and pepper. After the spinach has wilted, add 1 cup of heavy cream and reduce until it thickens.
Add the salmon (about 8oz) and a handful of finely chopped parsley.

Toss with your favorite pasta, top with parmesan cheese, add some good crusty bread, and enjoy.

NICE!

It's kind of like what I make with my smoked salmon.  Same concept except you get that smokey taste with the pasta.

Damn that looks good!  Thanks for the recipe Jim.  I'm gonna try that with some of the salmon I caught last week.
