I was just gifted A piece of sea-bass by one of our very own :smt003 Never had it before, and since it may be a while until I have any again. I was wondering what the most memorable way to make it is   :smt002

Grilled or baked with little or no seasonings as to not over power the true taste of the fish....just like sturgeon.

Briquettes preferred...no silly propane

my co-worker gave me some too...

& I made some sashimi (WSB on top & halibut on bottom).
I thought it was ok (& hali was better).  Dense meat & little watery (fishy watery).

I agree...

Pan fry w/ little lemon & garlic paper was awesome.  I think that better use of the meat this way & it was more flavorful than halibut.  I think any white meat (like halibut) recipe will work.

I definitely wanna get some more!!!

I did poke, ceviche, sashimi, fried, baked, BBQd. All were very good. If you don't like raw, then skip the first 3.

Cut it into 1/2" strips, coat with beer  or tempura batter and deep fry at 375 degrees. Serve as tacos, fish and chips or tempura. I don't deep fry too much but WSB is awesome deep fried.

Some of the best tasting fish in recent memory was the belly strip that was left after I filleted my fish last year. Grilled it with s&p and a bit of good olive oil. Wonderful flavor.

Here is my favorite tempura recipe.

Be sure to follow the tips in the "read more" section.

On the way home stop at the produce market at moss landing or Capitola and pick up some onions, green beans, broccoli and mushrooms. Oh and if you have fresh squirts left over or sand dabs batter them up too. It's fish and vegetables so it's got to be healthy.  :smt044 :smt044 :smt044
