Custom Smoking Resource

I have a customer who brought me a slab of his cold-smoked Lox last weekend.  I have to say it was out of this world... the best!

As it turns out, he has a side business where he does custom smoking.  He'll do hot or cold smoking but specializes in cold smoking and from what I tasted, he knows his stuff. 

Anyway... here's is info if anyone is looking to have som Lox made from some of those big hog salmon we're going to lay into this year  (wishful thinking).  I don't know what his prices are, but it seems he does it more as a hobby than anything else.  Give him a call.
