Would the little 5lb folding anchors work? Or should I go heavier?

Don't use that type of anchor for river it will hang up get a lead pyramid pm Craig

Ya you will want a pryamid one like Mickfish said especially if you're going to be fishing the American. These are what all us Sac guys use, our anchors are 10lbers which will hold your boat just fine  even the the shallow fast riffles. Just make sure whatever anchor you use that you have a quick release set up so that you can dump it when that "oh shit" time comes.
