I won't go into too much detail here unless anyone has specific questions, but Saturday night the GF had a friend/client over for dinner - in order to make a good impression, I was asked to handle the heavy lifting in terms of food prep.  After some discussion, we decided on a 3 course, small plate seafood extravaganza.

Course 1 - Dungeness Crab Cakes with Cilantro Aioli
Pretty straight forward here - a little garlic, lemon zest, scallion and cilantro, bind loosely together with just enough panko to hold it's shape or else they get mealy.  I use a food form or biscuit cutter to keep them uniform, then coat with panko, re-shape and fry.  Served on a bed of dressed arugula (champagne vinegar, olive oil, honey, dijon, S&P) finish with more aioli.

Course 2 - Avocado Tuna Tartare.
Beautiful piece of Pacific tuna, 1/4" dice, a little olive oil and white pepper over avocado with lemon juice.  I made a Sriracha, sesame oil, mayo sauce and some micro green clover sprouts for garnish.  Served with taro chips, but also good with fried wonton wrappers.

Course 3 - Spicy Thai Mussels with Garlic toast.
Nothing original here, I basically boosted this recipe verbatim from epicurious.  It's been a standard in our house for years - easy and tasty.  I make a full batch of the sauce for 3 lbs of mussels, good for dipping bread in.

It's not the actual W that doesn't suite me - I'm fine with that.  It's the gambling half my sh*t and 50% custody that left a bad taste in my mouth last time.  Although, I must admit if we lived in the same city, I could feed the WAF account all week so I wouldn't have to fish on the only 2 days we get to see each other... hmmmm...
