This is called " Tote's Killer Fish Tacos". It got it's name because if you were lucky enough to get the recipe from me and told anyone...well, I would have to kill ya.
Since everyone on the board has been so nice, I decided to give it up for Christmas.

Let's start with the mango salsa:

2 mangos
1 bunch of cilantro
1 large tomato
juice from 1 orange
juice from 1 lime
2 cloves of garlic ( pressed)
1 bundle ( large ) green onions
1/2 red onion
jalapeno to taste

Chop and mix all of the above ingredients. I prefer to use the canned diced jalapenos only because I have had the juice from slicing them up in my eye..NO FUN.

The Sauce:

1 cup mayonnaise
1/4 cup milk
4 tablespoons lemon juice
1 teaspoon garlic salt

Combine and stir the above ingredients.

The Tortilla:

Corn..what else???
Just be sure to heat it up the way you like it.

The Fish:

Whatever you like. I prefer blue and black rockfish. But get rid of the bones whatever you use.

Cover a cookie sheet with olive oil.
Sprinkle both sides of your fish with dill weed.
Place the fish on the cookie sheet.
Put a few scoops of butter or margarine on the cookie sheet.
Bake at 300 degrees until done.

Place all the cooked fish in a bowl and mash together with a fork.
Scoop a generous portion of fish onto your tortilla, add the salsa, drizzle the sauce over that and take a bite.
You will be VERY VERY happy.
