this guys "pinoy gang sign" is closely related to this subject......Water to Rice Ratio= first pinkie knuckle is the rice, the next knuckle up is the water.

Noone mentioned rinsing rice....  am I wasting time by always doing so before cooking?

The only time I rinse rice is with short grain rice before I make sushi rice.

ed are you talking about with a rice cooker or without one?  It is significantly more difficult to make nice clean rice without a rice cooker.  You also are likely using too much water if it is coming out sticky.

If you have a safeway nearby try the balsmi (thia) white rice. 1 cup rice with 1 1/2 cup liquid ( water, broth, etc...) cook 15 mins. let set 5 fluff with fork.  non-sticky.  good with all types seafood and chicken, not to mention fried rice.
The more the merrier.

I and my dog need a fishing trip rery soon.

my freinds from laos make sticky rice , but its a different type of rice "sweet rice" is soaked in water for a few hours then steamed in a bascket and it comes out sticky , good finger food and its even better with this sauce they make which i now make , fish sauce ,cilantro , garlic , thai peppers , lime juice all grinded together

I have been using a pan. I will purchase a rice steamer and some quality long grain ASAP. I like the idea of adding broth instead of water. So many great responses. Does altitude make a difference in rice cooking times?. I live at about 6,000 feet. Thanks guys.

It's kind of funny, because what one might call sticky, another may not.  I prefer my rice sticky, but not "wet gooey".  But the Thai's have a real sticky rice which makes my preference not really look sticky.  It's more of a "dry gooey".  Still others wouldn't say that mine is a sticky type, although it sticks together.  Go figure.  Any standard Cal Rose style of rice is my choice.

Ah, thats a bit of info we need. At 6000 feet elevation, water boils at a lower temperature, so you'll need to increase your cooking time and perhaps use a bit more water.

I would assume it does but not sure how the rice cookers do it.   When we went to Tahoe my wife's friends brought their own rice cooker and the rice turned out fine.  Not sure if they used more water than usual or not.  Only one way to find out!

Hey Eric, you could have all the ingredients to make fried rice but if you don't have the proper
heat, it will never be like what you get from a Chinese restaurant. You need big flames to make
good friedrice.

I agree with Darius with 1 cup of rice to 1 cup of water using the rice cooker. My favorite is the
calrose rice also.

Bipstek goes real well with steamed rice. :smt005 :smt005
