Not sure what I'm doing wrong, but I am the king of sticky rice. I've been to restaurants and have seen non sticky rice, so I know it can be done. What am I doing wrong?. I buy quality rice, follow the instructions, and my rice sucks. I'm serious. I've been cooking crappy rice for thirty years. Any tips would be greatly appreciated. Thanks

There're many different varieties and brands of rice on the market (long grains, short grains, broken, sticky, etc...).  If you want non sticky rice, go with the long grains.  One of my favorate brand for the long grains is the "3 Ladies" brand.  Another thing is try to use less water to cook the rice.  Usually, 1/2" of water above the rice should be enough for most commercial automatic rice cookers.

Have you tried the avuncular culinary concoctions from Mars Food?  I met a regulatory gal at a food law conference - she sent me the following "samples", lol.  I tried each one.  I really like whole grain medley even tho the seasoning's a lil on the salty side.

But preparation could NOT be easier.  Seriously.

1:1 ratio meaning 1 cup of rice equals 1 cup of water so on...

For long grain white rice, I use Mahatma. Two cups of water, salt it and bring it to a boil. Add one cup rice, return to boil, then turn burner to simmer. When boil slows, put lid on it and set the timer for 20 minutes. DO NOT PEEK! Take it off the burner, let it set for 5 minutes, then fluff with a fork.

Bring water to boil Twice as much water as rice 1 table spoon butter poor in rice stir reduce to low and cover exactly 25min

If you've tried varies amounts of water and your rice is still sticky you are probably cooking a Premium Short Grain brand such as KOMACHI, no matter what you do this rice will be sticky.  Like HDRich said try a long grain.  If you want quality long grain look for a basmati variety.  Another option is brown rice, the medium and long grain varieties will never be sticky.  A excellent medium grain brown is GEN-JI-MAI, although Hinode is also good.

Like you, I totally rinse my rice.  Like three times, until its sitting more or less in clear water.  Who knows where its been...
