Fuzz, very nice Chanty haul!!! Just curious if you were under inland oaks or along the coast? I haven't gone out for a couple weeks. Thought it was over. They look prime. Instead of drying chanterelles, have you tried sauteing them till they release their juices then pack em and freeze. They retain their texture and flavor more than drying them. Take em out, and just finish the saute. Other shrooms fair better with drying.

Wow thanks for the report.  When can you pick chanterelles in CA.  I used to love picking them in OR and my wife has been asking me to  go hunting for them some day.  She went for them quite a bit in Russia growing up.

Mostly a winter gig around here. It's on the wayning end of the season now. There are some places that fruit all year tho I'm told.

Thanks for the advice - I'm a relative mushroom newbie... so always learning.  I did hear from a few sources that freezing is the preferred method for preserving chanterelles; however, in this case I didn't dry them to save them.  I did it primarily to drive some moisture out.  A couple days of curing/drying and I don't need any dry sauteeing before adding oil/butter.  I like the texture/taste better this way.  :)

My last project was to preserve some via Thomas Keller's recipe for "Mushroom Conserva".  Basically sauteed/preserved/canned in olive oil, chili pepper, herbs... & a bit of vinegar for acidity.   :smt003
