Most people I've shared this with say.."OMG, that's awful!".
A few minutes later, they think about it and realize they want to try it.

Come on, how can you go wrong with Bacon wrapped Pork cooked in the smoker?:smt001

Let's get started:

The first time my son made this he used mild sausage and sweet sauce.
It was good, but it didn't fire me up much.
I like spicy and less sugar, so I did it a little different.
This one was much better.

Use any flavor sausage, sauce or rub you want.

2 pounds thick-cut sliced bacon.
1 1/2 pounds Italian sausage (oops, I used 2 pounds).
Barbecue rub.
Barbecue sauce.



We only eat "healthy foods" around here :smt002, so I used low sugar Woody's Sauce and Salt Free Pappy's BBQ rub.



Using 10 slices of bacon, weave a square lattice like that on top of a pie.
Make sure it's tight. Sprinkle BBQ rub evenly over the lattice.



Spread the sausage evenly over the top of the bacon lattice.



Press the sausage to the outer edges.



Brush or slather BBQ sauce over the sausage.



Place remaining bacon in a frying pan and cook until crisp. I had 8 or 9
slices remaining, so I fried them all.



Crumble fried bacon into bite-size pieces. Don't snack on too much of it!



Spread the cooked bacon over the sausage. Sprinkle with barbecue rub.



Very carefully separate front edge of sausage layer from bacon weave and
begin rolling sausage away from you.



Bacon weave should stay where it was, flat.



Roll sausage toward you, this time with the bacon weave, until it is completely wrapped.



Turn it so seam faces down. Sprinkle with more barbecue rub.



Place roll in a preheated smoker.



Cook until internal temperature reaches 165 degrees on a meat thermometer.



Take out of the smoker when done. Smells sooo good!



Glaze the roll with more sauce. A sugary sauce will give it a glossy coat.



Slice the Bacon Explosion into quarter to half inch rounds to serve.



If you rolled it tight enough, you should now see a nice bacon pinwheel
pattern throughout the sausage.



That's it! Slice it and savor all that yummy, smokey pork. :smt006
