Went out on 1/16/10 for my first charter.  brought home 120 lbs of calamari now I need recipes to fix it.

Just to clear, Humbolt squid (huge) or whole squid like the kind frozen for bait and consumption (1lb box small)?
 They taste different and are prepared differently.

a buddy of mine just gave me two huge slabs of humbolt. he told me to put it in boiling water for 30 seconds, remove and peel away the skin. then pound it out to desired thickness, about qtr inch. Put some oil in a pan and get it heated. Drop meat in egg then bread crumbs (we used the italian seasoned, then added garlic powder and cajun seasoning) put in pan. It only cooked for a few seconds on each side as our oil was hot. then remove and gorge yourself. It was simple and turned out very good.

They are humbolt.  I am getting some very good recipes that I will post this weekend, Need the real computer not a netbook

Instead of bread crumbs I used crushed Waverly crackers, and also squeezed a bit of lemon on the meat.

I have been usiing panko bread crumbs.  a friend of mine has been useing wheaties,and corn flakes.  I have tried it smoked, just let me say don't do it was the worst mistake i've made with fish so far.

I will be getting more in nov. when squid season opens once again.

I think sport fishing  for Humboldt squids is open year round.
