i saw them do this when i was in japan at the tsujiki fish market.  pretty awesome with those big samurai type swords.

looking back, I probably should have taken video of it.  we got some still pics somewhere.  the one we saw filleted was around 200lbs, so a pretty good size one. it took 3 people to hold it still while the one butcher took care of the cutting with a giant sword like knife, probably around 1 meter long.

They cut it up, then put it back together like Lego... so they can show off again tomorrow.  ;)
