I need a new fillet knife. I discovered at Albion that my current cheap-o makes a full stringer a hassle (I know, nice problem to have)

I know Cutco makes EXCELLENT knives. I own many of them including the filet knive which I plan to test this weekend at New Brighton. In the meantime, I looked on their site and you may want to check this one out:

I second the Dexter Russell knives.  I've got the 7" and the 9" and love them both; that is when I don't leave them at home like I did at Albion.  I only wish that Erik was selling them when I made the purchase.

If you prefer to buy local, I know Mel Cotton's also sells them but they DON'T come with the sheath.

I bought this knife a while back and it was great until I needed to sharpen it. The combo 40 degree on one side and flat on the other makes re-sharpening a pain.  :smt009
I've been considering a Forschner or a Dexter Russell...

I use a Cutco knife. I have had it for 12 years now and it's still going strong. . It comes with a sheath. The best part about the knife i like is that it can be extended. The blade all the way in has a blade of 6 inches or can be pulled out to 8 inches. The sheath also has a hook sharpener on it.

I looked at the cutco but I can't seem to find the price and do I have work through a distributor or something?

I have two I use, cheap & not cheap.
The cheap is great because it is easy to sharpen & can get beat on. I got it from a K-Mart somewhere, many years ago.
The not cheap is a swiss model that is a great knife & holds an edge great BUT it's a chore to resharpen.

I end up using the cheapie more since it lives on my cleaning table, with a stone next to it.

I've had my DR fillet knife for almost 30 years. It's at least a 9" blade, very flexible, and takes to the steel very well.
