    I pan fried the striped bass from over the weekend, and it turned out to be only 2 for dinner, so we had a lot leftover. Thinking about something quick and easy, I decided to make fish tacos ala Rubio's (or as closely as I could to it). Simple and quick, this turned out to be a good recipe.

    • Pan fried fish - warmed in the toaster oven
    • thinly sliced purple cabbage
    • corn tortillas (I prefer corn to flour, but it's your call)
    • white sauce (the coup de grace to this recipe)

    For the white sauce, just combine the following. It is not exactly right - it's got a bit of an Indian feel to it, but it goes really well with the fish!
    • 1/2 cup plain yoghurt
    • 1/2 cup mayonaise
    • fresh squeezed lime juice
    • diced serrano, jalapeño, or habanero chile
    • 1/4 tsp cumin
    • 1/2 tsp crushed dill
    • 1/4 tsp oregano
    • cayenne pepper to taste (or heat)

    the amounts of the spices are a guestimate - just adjust to taste. I was heavier on the cumin which may be the reason for the Indian feel. The lime juice should be adjusted to get the right consistency of the sauce - kind of runny.
