There are several threads that address this question, though for me it's simple, in the ocean I wear a 5mil farmerjohn, with a NRS hydroskin shirt to slow down water intrusion should I go overboard, and 5 mil booties, and I'm thinking of going up to a 7 mil FJ after some of the events of this season.

My opinion is safety should always be your first consideration, there have been a few kayaks full of water recently and while they didn't actually sink out of sight, you couldn't get up out of the water to protect yourself from the cold, in that case longterm immersion in the ocean would result even with a buddy along,

Earlier this year my yak developed a significant crack and almost put me in that position but I was in the delta so it just turned into a bad day instead of a dangerous one.

Wetsuits are also readily available for rent. Especially in the Monterey area.

Be safe, have fun

Here's a couple of YouTube links of interest. Seems to still be a controversial subject. I wear my 3mm farmer johns for steelhead river shallow wading, but don't trust them in the case of full submersion for an extended period. For that I prefer to wear at least 3mm wet suit, or dry suit with latex seals. My 2 cents for what its worth.
