I have been using this marinade for many years now, usually with salmon, steelhead or albacore, but I caught a few fish yesterday (non yak) including a couple of 3 lb. vermilion and a mix of coppers, olives, and gophers, and wanted to grill one of the reds whole.  I would have to say this is the best all around fish marinade I have tasted.

Ingredients:
Salmon, Steelhead fillets (skin on), albacore loins, or whole rock fish (approximately 3 lbs)      
1/3 cup Olive Oil
1/3 cup Brown Sugar
1/2 cup Teriyaki Sauce
2 Shallots of 1 Small Onion Diced Fine
6 Minced Garlic Cloves
1/2 Stalk of Celery Diced Fine
2 Tablespoons of Grated Fresh Ginger
Juice & Zest of 1 Lime
1/4 to 1/2 cup Tequila
Directions:
Heat oil in a small sauce pan, add onion or shallot & celery and cook on low medium heat until softened (3 to 5 minutes), add minced garlic and cook for 1 more minute.   Add the brown sugar, teriyaki sauce, ginger and cook until the sugar is completely dissolved.  Add the lime juice and zest and remove from heat and allow to cool completely (refrigerate or cool in ice water).  Cut 4 to 5 scores through the skin if using whole fish.  Add the tequila and marinate fish for 2 to 3 hours.  Grill fish until done but not overcooked.  The whole fish cooked for about 12 minutes per side.  Reheat the marinade thoroughly and spoon over fish portions and cooked rice.  Enjoy! :beer3

That sounds and looks most excellent, Stache.  I don't know if I could make the tequilla and lime last that late in the game, but that sounds like half the fun.  I'm likely too lazy to fulfill this recipe, so please cook this for me some time, because I believe you that it's the shiz.   :smt001

Well I tried to do it like u...didn't happen didn't have any garlic cloves used a little garlic salt, didn't have celery, didn't have lime juice or zest, but used lemon and just sliced it and diced it....added couple jalapeno peppers...

Didn't have whole fish used a grip of gopher fillets...

My Bro who is a finicky eater...said "That was the best Damn fish I ever ate"

I tried it with SALMON fillets. The only thing I forgot was the celery. No harm no foul.
Let it marinade for 2.5 hours then put it on the smoker for 5 hours.
Turned out great!!!!!
