This dish works well with blue or black rockfish. Hot Bean Paste can be found at the 99 Ranch market but can be hard to find because it is not with the other sauces. LOL on getting any help finding it.  :smt005  The hotness varies significantly between brands so taste it first then decide on the amount to add.

1 lb  Dried Chinese Noodles

1-2   Whole Rockfish (gut, gilled , scaled) scored diagonally 3-4 times on each side
4 Tbl   Peanut Oil

1-2 Tbl   Hot Bean Paste
1 Tbl   Garlic (minced)
1 Tbl   Green Onions (minced)
1 Tbl   Ginger (minced)

The Sauce
1 ½ Tbl   Cooking Wine
1 ½ Tbl   Soy Sauce
1 ½ tsp   Rice Vinegar
1 ½ tsp   Sugar
½ tsp   Salt
1 ½ Cup   Water

The Thickener
1 Tbl   Cornstarch
1 Tbl   Water

The Garnish
3 Tbl   Green Onions (thin sliced)
1 Tbl   Sesame Oil

½ tsp   Red Chili Sauce


Directions:

Boil noodles as directed, drain and place on serving plate

Add peanut oil to a wok and sear fish over medium high heat about 2 minutes per side until brown. Remove fish an set aside.

Add hot bean paste, garlic, green onions and ginger to wok and stir fry till fragrant, about 1-2 minutes. Add The Sauce and return fish to the wok. Cooked covered over medium heat for 6 minutes turning the fish after 3 minutes. Remove fish and place on top of noodles on the serving plate.

Boil sauce uncovered over medium high heat until reduced to ¾-1 cup. Taste the sauce and add red chili sauce if not hot enough, then add The Thickener and stir for 1 minute. Then add The Garnish and stir 3-4 times and pour over fish and noodles. Serve immediately.
