My mom wants to buy a SOT kayak that can be used tandem/solo. Her budget is around 500. Let me know if you have anything in good shape.

Many manufactures have tried to accomplish this, but IMHO none really have.  Tell her to buy a single and rent a boat for the occasional paddle partner.

Try the OK Malibu 2 or the WS 130T or the Malibu Pro 2 tandem. But whatever you do...don't get an OK Aegean! Ever.
I think the OK Malibu 2 paddles as well as my old Drifter.
