I have killed many deer in my life.  you know what?  I have never ever made a burger from venison.  not sure why. 

well, I thawed a hunk of meat labeled, Doe-Hind.  I stared at it for a bit, thinking TACOS.  but it hit me.  burger.  I chunked it up, and put it in the freezer again to firm up.  pitched a single slice of bacon on top to freeze alongside. 

into my food processor to turned into minced meat.  small batches turn out awesome.  the bacon disappeared into the ground meat.  two garlic cloves, a hunk of shallot and I made three patties.  salted them and pan fried them.

I made a burger for my wife, and she took a bite and "YUUUMMMM!!!  this isn't beef is it?"  I made my burger and tasted it.  holy kamolee..it is good way to eat it.  I will go shoot another doe this winter!!  for sure.   I made the third burger and gave it to my 97 year old neighbor. she loved it, up until she acted all loopy and I called 911.  I think my burger saved her life, simply by making me visit her.  good burger all around.

That looks delicious.  I’ve done a lot of hunting the past 40 years, mostly ducks.  The 2 deer hunting trips were skunks.  If the family enjoyed venison like I do, I’d probably try again…. But they don’t.
We're gonna need a bigger boat!

Hot damn! I was thinking of doing that very same thing this weekend! I've got a big hunk of ham off of a buck I shot last Fall and was thinking of grinding it up. No more thinking, I'm thawing it out tonight and grinding it tomorrow. You've inspired me!

my brother bought a big property in TX.   doe are everywhere.   I go for a turkey and a doe now.  hopefully annually.

Burger sounds good!

What kind of deer was it?  I grew up in Oregon, and definitely noticed a difference between coastal blacktail and desert mule deer.  Both delicious, but in different ways.

The best venison I have had was white tail out of Idaho , taken by my cousin , east of Riggins ID.

I’ve had Elk too ( Colorado) it was very good but that WT was better

I used to eat a lot of Dove , my mother would make Polenta.

BITD I would walk the RR tracks around San Pablo / Tara Hills with my 870 at sunrise or dusk when they get their grit , or sit in a ditch by a Eucalyptus grove or find a burn patch .


Rabbit too , but I cheat and go to Willowside Meats in SR for those LOL

texas whitetail doe.   smaller animal than I imagined.   but plenty.  very tender.

I haven't had whitetail since I was a little boy - maybe 8 or 9 - so I don't have much of a reference on that one.  I remember when my dad got that one though - he was super pumped!  Western Idaho, early '90s.

We used to eat all kinds of game birds - grouse was always my favorite, but they can be hard to find consistently.  Chukar was probably my next favorite, but those took a lot of work to hunt.  Quail and dove are both tasty and plentiful.   

I really need to get back into hunting - I would love some venison, wild pork, or upland birds.
