Union Lunch!

Open faced halibut cheese sandwich

Leftover halibut fillet 10oz.
All finely diced
Celery
Red onion
Capers
Pickle
Fresh jalapeño no seeds
TBS.  Homemade chimichurri
Dijon
Avocado oil mayo
Chili powder
Salt and pepper
Dash Habanero Tabasco

On sourdough/butter one side make golden, before flipping, wipe mayo on top side then flip, stack with spread and top with errr uhhh velveeta, cover on low until cheese melts.

Eat with fork and knife

This makes me feel even better about putting mozzarella on my fish tacos. Velveeta is something only enjoyed by people with sophisticated taste and a refined palate, so it’s no surprise to see you putting some to good use. I’m gonna need to try your recipe for sure.

If you had some Cowboy Creamery Mt Tam on there instead of Velveeta, I'd totally be on board. Or even some Jack or other more real cheese. Too many sheeple on the Velveeta ("'cause it doesn't separate") bandwagon. (Repeated on The Menu movie)
Of course if it was already made, I'd eat it and begrudgingly enjoy it.

I get it my gourmet slayer!  Funny thing, my church buddy works for cowgirl creamery and I asked if he ever scored free cheese.  He says he gets more cheese than he can handle.  I told him that the reason my wife’s favorite animal is a cow is steak and cheese.  The following week, he came with a solid box of assorted cheeses including several mt. Tam options. My bride is currently over the cheesy moon at the moment.  As The Gopher understands, my palate is a touch more sophisticated than my brides so I’m stickin’ to my gooey Americana option.  I will certainly make a truly high end option on another day especially if we share a sandwich on some salty day!

Looks Delish. Not a big fan of Velveeta though. Ate too much of it as a kid back in the 60's. Velveeta was also the old school go to bait back then. Caught Bass, Trout, panfish and Catfish with it. May have pick up a block of it and try it again to see if it works better than Power Bait.
