Thai Style!

dust the fish, and pan shallow fry it.  serve it with a humongous green papaya salad.  a huge container of warm STICKY RICE.  and copious dipping sauces.  I made two.  Naam Jim which is cilantro heavy, and the ubiquitous Naam Cham.  both spicy, tangy, savory, and sweet.

there is something special about dipping a ball of sticky rice into a sauce.  even the sauce coming out of the spicy papaya salad.
