I was gifted a nice WSB from the fish market a couple of weekends ago, and I had the worst time cutting through the bigger bones with my chef’s shears. I remembered that someone here once suggested using garden shears for fish bones, so I decided to give it a try. Since my garden shears aren’t as sharp as they used to be, I picked up a new pair — and wow, I was able to cut through the collar bones with ease. If I had known sooner, I would have saved myself a few F-it moments.

I've used garden shears on rockfish spines when I'm gifting or cooking whole fish. Never used them on inside bones.

I have moved up to chef shears from a knife on the kayak for bleeding fish and cutting line thanks to Paul's recommendation shoot might give Allen's garden shear recommendation a try for dismembering fish as well.

Thanks for the endorsement and those look like some fancy garden shears Thanh. Lucky you on the gifted WSB seems like a fish that doesn't freeze so good, how did you prepare it?

I was using kitchen/fishing shears, but I've ditched those in favor of trauma shears.  They're lighter, cheaper, made of stainless and do well cutting gills, fins, bones, braid, etc.

What? They don’t freeze well?!!! They’ve been in my deep freezer sitting at around -20 since last Sunday. I haven’t made anything yet. My plan was to sashimi it or maybe steam Asian style. I do have a few recipes lined up to try. Hopefully the meat is ok in the deep freezer.
