I got my hands on some WSB and decided to make an aquachile negro with it.



Charred onion and garlic are pureed in a blender with soy sauce, maggi seasoning, lime juice, and black garlic before being tossed with the fish, avocado, cucumbers and quick-pickled red onion.  Chiltepin peppers round out the dish with some complex heat.

Not yet, but what got me thinking of aquachile negro in the first place was having an aquachile negro ribeye in Flagstaff last week.   I'd do this with any fish I would normally use for a ceviche... halibut, rockfish, wsb, cabbie, bft, scallops, shrimp.  I can't think of one I wouldn't use with this, to be honest.

Not yet, but what got me thinking of aquachile negro in the first place was having an aquachile negro ribeye in Flagstaff last week.   I'd do this with any fish I would normally use for a ceviche... halibut, rockfish, wsb, cabbie, bft, scallops, shrimp.  I can't think of one I wouldn't use with this, to be honest.

I wound up using the leftover aquachile negro to replicate the ribeye dish I had in Flagstaff.  I strained the aquachile since I figured it had already leached everything it could out of the solids and grilled up a simple ribeye with just salt and pepper.  While the steak was grilling, I brought the aquachile to a simmer and reduced it a bit.  I sliced the steak and topped it with sliced cukes and red onions and poured the aquachile negro over it.
