I couldn’t find the cooked fish thread so here is my latest:
My wife got the low down over the phone from her 98year old father.
Steaming whole rockfish is such a more efficient use of the fish than filets. A 14” brown fed 3 of us.
Light bit of oil on the fish, salt, chopped green onion and ginger. Place on plate or shallow bowl in large pan with boiling water and cover, steaming for 12-15 minutes. Empty any juices/water from the plate/bowl and drizzle sauce (soy, little oil, chopped green onions, cilantro, black pepper) over fish and steam for 2 more minutes.
