Being under the mistaken impression for years that salmon didn’t have parasites I used to eat the beating heart until one of the fish I opened up had a golf ball sized clump of curly squirming worms next to the heart

Our local Japanese market guy set me straight about it

I also had a long conversation with a fisherman who ate rockies without freezing and paid the price in surgery on his esophagus. The fully mature parasites you can see probably aren’t the ones you need to worry about

I’ve eaten Salmon while cleaning it too. But will never eat Rockfish sashimi without freezing for a week. I like RF sashimi the meat is firmer texture with sweetness like a snapper. I think the best RF sashimi I tried is the Canary.

Fresh rockfish sashimi is fine. Those parasites will more or less pass right through you.

Fresh raw salmon is no good because they are tapeworm vectors which will gladly use you as a host. Gotta freeze first or you'll end up like this guy: .

In other news salmon season will be officially closed until September as of 6/23. I feel bad for the northern and inshore fleet. We can lobby for a one fish limit next year to hedge again WFO bites and good weather in the early season.
