I'm also interested in the salted dried fish, done it with halibut eggs but that's it, what's the process? Freezing rockfish and lingcod just doesn't do it for me.

I cut small/medium rockfish from the backside.  You can see from this video:
After cleaning, I spray some salt both inside and outside.  Using the hang dryer (purchased from a Korean grocery store), semi-dry the fish.
Typically takes 4-5 days.  You can cook the fish or vacuum-pack them and store them in a freezer.  When you cook semi-dry fish, the meat is much firmer and flavorful, in my wife's opinion.

Thanks for the explanation, I'm going to give this fish drying and preserving a try. Makes sense that it would concentrate the flavor and freeze better with less moisture in the meat.

I think so.  I watched my mom using it.  It is a great way to keep flies away.
