I can help with that, sounds like a fun afternoon.  I have 2 canners so should be able to fit that in a load of each.

I have experience canning smoked salmon, lingcod, rockfish, halibut, herring, pork/chicken, etc.

Bdon - if you end up doing and schedules align I'll help with processing and clean up for the practical experience of doing it. I've never canned fish before and it seems like a good skill to learn. I'm in the outer sunset.

I don't have the time or equipment to get into canning right now, but my grandmother used to can albacore pretty regularly when I was kid.  She would buy two or three fish from the boat on the dock, and can same day.  House stunk pretty bad for a few days after, but her tuna was the gold standard for sure.  Spoiled me on canned fish, haha.  I think she did a mix of water, olive oil, salt, and a couple peppercorns in each jar, but it was a long time ago and I was pretty young the last time I helped.

A friend loaned me his pressure cooker and I gave it a go on a small batch after doing some diligent Youtube researching and buying of stuff for canning.  I made a few of the jars seasoned with a clove of garlic, some peppercorns, salt, a small pepperoncini and a squirt of sriracha.  The others I did a scoop of Montereal Steak Seasoning.  I tried the garlic one today for lunch (keto style) and boy am I super happy with the result!  It's so incredibly tasty!  I hope the montreal ones are as good too!  Going to do another bigger batch before returning the cooker and try a few more seasoning/flavoring options like smoking the tuna first.

I just finished up a batch of bellies and collars, hot smoking at 225 for 1.5 hours to impart smoke flavor, but also to render some of the fat a bit.  Then canned as normal, after picking the meat off the collars.  No brining before smoking, pinch of salt in the can just like I normally do.  Turned out great.

I think you mean pressure canner...there is a difference but maybe you are aware... :smt006
