I purchased a VanHunks Sauger a while ago and have been struggling to make the pedals work efficiently.  From what I've read, they seem to be the same as the first generation Hobie pedals.  I can barely get the kayak up to 1mph in still water....any wind or current and I'm barely moving forward. 

There are some numbers on the drive that seem to indicate that they can be adjusted. 

Anyone have experience with these, or "first" gen Hobie pedals?

I'm not familiar with that brand, but it looks like the "standard" fins that come with Hobies. Those are easy to pedal, but you can only go very slow. For Hobies, there are so-called turbo fins, which are much longer (of course, you need longer masts too), and enable much faster speeds.

If you can disassemble the fins/mast, maybe we can see whether Hobie trubo fins might be an option.

I think, but do not know for sure, that those short fins could be made longer by riveting or bolting material to the sides of the current fins. Rubberized or plastic material with some flex would be best but for an experiment 1/8th ply would do. 1 mph is way too slow, 3mph is kinda minimum for Hobie speed. Maybe for the experiment no drilling, bolts or rivets. Wrap material to current fins with Gorilla tape and see how much  needs to be added to give the thrust you want.

The numbers are to adjust how far or close the pedals are to you. You basically want your leg just short of fully extended when pressed forward all the way on the stroke.

I would hit it with some anti grease and a dry lubricant like hobie suggests.

Hit these moving parts Ive highlighted, I have an older v2 with similar fins I think you have turbos already. But you could check there is an amazon seller selling that model of fin in turbo (without the masts). You should be going faster then 1mph, I can push my outback 3mph pretty easily with mine.

That looks very similar to my Pelican branded drive. How long is your kayak?

You can loosen the drive cables a 1/4 turn or so and they will get easier to pedal, but won't necessarily make you go any faster unless you pedal faster.

Yak is 12.5", it's actually a tandem

Would you mind measuring your turbo fins, so I can check length on mine?

I'm going to lengthen the stride, apply the dry lube and see about a slight loosening of the cables.  I think the stride length is the biggest issue.
