Looking good.  I just cut up a couple for the first time.  Nice to see yours.  I wasn't sure if I was to cut out the notch like you did where there were extra bones. 

Going to try the ceviche also and not sure what I am going to do with the fillets yet. 

Will the fish hold up in a cioppino?  My wife is making that on New Years and wasn't sure if we should add it to the crab, octopus, mussels, clams, scallops and what ever else she is putting in there.

Yes will be good in cioppino. The fillets firm up well in soups and stews.

That's great news.  Still sucks we have to buy crab this year but have most everything else in the freezer. 

Ok, back to Jims post.  In-laws must love all the goodies you bring over.  Like ocean Santa throughout the year.  Especially living in Bakersfield.

I cut the belly meat/rib area away from the main filets, slice off the meat that is there and eat it while working...then throw the bony section in the soup with the big meaty heads/carcasses.

The filets make bomb sashimi, and then can use scraps/trimmings for ceviche.
