Icebreaker Merino top and bottoms, Lacrosse polly mix tall socks and a pair of DeFeet Woolie Boolie on top of that. Those who don't know about DeFeet Woolie Boolie need to know, best long lasting warmest socks ever, makes smart wool like look like Walmart cotton specials. These socks will mold to your foot after about 4 - 5 washes. I've bought this brand for almost 10 years and on average they last 2 - 3 years, wearing them almost every week. Yeah I like good socks.

Wingshooter, I looked at the Defeet and they seem to only come in short socks, no knee high. Is that what you use?

Looks like REI no longer carries Polartec. I like how the Polartec has a relief flap.

I like all the Woolie Boolie brands. They're thicker and seem to last the longest. Finding anything is stock right now will be tough.

Kokatat fleece uni suit.  Really cold, UA base 3's under the uni.  Mysterioso socks, if cold Thorlos over the Mysteriosos.

If it's not super cold I wear Simms thermal shirt and pants if it's COLD I wear a one piece kokatat fleece...crazy warm.  Always mysterioso socks.

is it worth getting the gore-tex? or is the hydrus 3l just as good?

I've owned the Kokatat hydrus 3L tempest for about six years now and very happy with them.  They keep me warm and dry, the material is breathable.
I've never owned the goretex pants and don't think its worth the extra $$.  My tempest pants are all stained from years of use, especially from Procure gels.  I like to use them for freshwater fishing.  I only wish Kokatat would offer one with a relief zipper.

Fishing addict what jacket do you recommend topping the tempest pants? I'm in the same boat with fisher deciding which pants are best or even going straight to dry suits which might be overkill for port of sac or even the delta area rivers for fishing.

For cold weather I use and recommend the Kokatat Tropos Tempest Paddle Jacket.  It has a hood that you can pull over your head if it rains or to keep warm.  All my kayaking jackets have hoods for this reason. 
The neoprene neck gasket keeps cold air out and the latex wrist gaskets keeps water out.  Just layer accordingly as needed.  I don't use the Tempest Paddle Jacket on warm days because I overheat.  I have another jacket thats loose fitting to stay dry on mild to cool days. 
I own a Kotatat Angler Drysuit too that use on every saltwater trip.  If I were to fish in cold snowy conditions I'd put on my drysuit.
