I want to utilize the existing threaded inserts and from what I've read the distance between holes is not the same as a standard pad eye.

Same deal on the Ultra 4.7, the threaded inserts are an odd size...and don't fit regular pad eyes. You have to either get a stainless one or rig a cheek block, like those Harkins.

Thanks.  I ordered the SS pad eyes from West Marine and a pair of Harkin pulleys.

I'm going to go with the use of a bungee ball through the SS pad eye at the bow --> Harkin Pulley --> SS ring --> Harkin Pulley -->  bungee ball --> SS pad eye at the stern.  Also planning on installing nylon wire clips/bungee buttons to manage the lines and prevent them from riding up over the gunnels.

Hmmm, good idea with the wire clips & buttons to manage the lines...because it's annoying when they come up over the gunnel.
