Agreed.  There are certain species that I won't do raw either, just not sure my dividing line is SW/FW.  I'm more of a trophic level selecter...but more than anything SW pelagics just taste better!

Thanks for the recipe MolBasser!  I used it the night before last and at it last night, very tasty.  I put the whole serrano in rather than a half, my wife likes it hot!  Can't wait to make it again, good stuff!

Sorry guys, but I'm digging this one out of the archives and looking for any new info.  I LOVE ceviche, and have some crappie in the freezer I was planning to make into ceviche.  I jumped into the Recipes thread to look for any and stumbled across this chain regarding health concerns from freshwater parasites. There's not much I won't eat, but all the tapeworm/parasite chat has me re-considering. 

I would imagine freezing the fillets for a length of time (these are over a month old) would be enough to kill off any nasty's, right?

While down in Porterville last weekend we headed to a large supermarket called Vallarta, where they sold ceviche by the gallon.  It was delicious, the whole time I figured it was probably tilapia, any thoughts on what the markets are using for the ceviche they are preparing/selling?

The cheapest, least expensive thing they can get their hands on and still call fish ... probably tilapia.

And I'd think your crappie would work.  Sounds yummy!

I eat fresh mountain trout with red meat raw. Cutthroat, brookies, splake and tigers. Beautiful bright red trout meat ice cold from mountain streams and lakes are great. I see tapeworms in many fish in the gut. I never see tapeworms or any parasites in the gut on mountain trout. I asked the state fish pathologist last year during some autopsies if it was safe and he said yes. Good enough for me. A little soy and wasabi. Delicious. mmmmmmm
So I'm packing my bags for the Misty Mountains, where the spirits go...........

Sounds good to me.  And I've never seen any parasites in any of the native brookies or 'bows I've caught either.

I made some ceviche out of a black I had in the freezer last night. It was delicious.
