its kind of like catfish, the taste really depends on where you catch them.  slow, muddy waters the fish tend to taste muddy.  in foothill lakes with clean water, bass taste pretty good.

I don't normally eat LMB, but I am more than happy to take a spotty, they're good eating and tend to overpopulate quickly if not culled.  I especially take spots from any lake that has a decent SMB population, since they generally outcompete smallies.  I'll even take female spots in those lakes (like berry, folsom, the very rare ones in pardee)

+1 for steamed chinese style, very delicious! I don't eat them out of bay area lakes or the delta though, too much mercury.

I eat whites, striper, and spotted bass but that's about it. Whites and stripers are the tastiest with striper being the best. I would like to eat SMB but they aren't very plentiful. That said bass aren't the best eating fish when compared to anything commonly taken from the ocean.

Cabezon is by far my favorite rockfish to eat. Although I have yet to taste vermillion.

Probably depends on the size of the LMB and the water it came from. Someone mentioned a celery taste. I agree. I've had them a few times years ago but they were way below the eating quality of a smallmouth. Cooking/cleaning method could probably result in good table fare though.

Of our freshwater warm water species, I prefer larger bluegill the best followed by crappie. Fry em up.

Never tried a spotted bass. Might have to bring a smaller one home to test out.

I agree it depends on the body of water.  A lot of people consider it bad form to keep them since they are so highly prized for CnR sport fishing.
