I remember catching Hake while salmon fishing with my Dad way back in the day.  We never ate one.  In more recent years I read more about them and learned that they are extremely delicate - if you don't get them cleaned and on ice immediately they turn soft.  So that's the skinny I have on the Hake/Pacific Whiting.

The entrance to Moss Landing/Elkhorn Slough is the closest finger of the Monterey Canyon which is a mere 75 yards offshore which is why you see so many deep water and pelagic fish so close to the shore.
