Mmm ... I'm thinking beer battered ling fillet sammies might be the best thing ever. Toasted Brioche bun, spicy aioli, pickled red onion.

My wife cooks up a killer beer bater (dark beer) halibut, fish n chips, hope to catch some more in the next few month, we are starting to run out, mmmmm.

As much as I would love to be out fishing and only a short distance to all the launches in Monterey Bay, I really need to reduce the inventory of cod and halibut I have now. Will be targeting seabass hopefully this weekend though.

Can I suggest some Hollandaise sauce? You can get it store bought but it's not much trouble to make yourself and goes really well with fried fish.
Ooo, that sounds yummy! I have friends with chickens, and a neighbor with a lemon tree. Sooo good with fresh local eggs and lemons! Also worth a little more for the fancy Irish butter, especially for Hollandaise!

What’s the recipe for the batter?

Just a simple batter, Li. Flour, salt, and a generous amount of old bay seasoning. (Dry ingredients). In a separate bowl. One egg, add water to the consistency desired. Beat until frothy. This method produces a nice crispy texture if you keep the egg batter thin. My first batch in the pics was with a heavy egg wash.

I also did a wet batter. Used the same dry ingredients but added water to it. I probably should have used a whisk and some type of carbonated water or beer of choice to lighten the batter.  :smt007 Still used a flour agent before dunking into batter so it would adhere.

I would suggest to lightly salt your fish before battering. Just my personal choice.

I am sure it make take several attempts to get it to your liking. 

No love on the seabass or halibut. Launched out of moss and only made it to aptos. Was hoping to make it to Capitola. Tons of bait along the way with pods of dolphins and a couple of small whales. Decided to troll back towards Moss for Halibut. Passed several boats hopscotching along the way. Most seemed to be in areas for short periods. Guessing they were having the same luck. From experience, with all that bait in the water i should have jigged some up. Took the easy way out and trolled frozen with no luck. Headed out to 120 ft of water and picked up about twenty good sized sanddabs for my buddy. Then headed to the south side for of moss for about 10 cod.

 Gifted my friend my share of cod since i still have some in the freezer. I even gifted some vacuum sealed cod to him. He doesnt make it out to the ocean much, so i loaded him up. :smt001

So with future adjustment , I hope to have a more airy light batter.  :smt007
