I think i have a new mission at Albion.

I enjoyed my batter but feel i need to season my fish as well before battering. Maybe a pinch of salt. Finished off with freshly squeezed lemon juice. Boom !!

Interesing.  I recently butchered a top sirloin cap.  The trimmed fat was worth keeping.  I took some bits and sautéed them with seasoning to make beef fat chicharones.  Was so good...I'm visualizing beef fat chicharron breaded halibut.   :smt006

Battered fish looks good! I've found a beer batter that I like pretty well, basically 1 cup of flour and one 12oz beer, plus salt and whatever other seasoning you like.  Hefeweisen makes a great beer for this because the maltiness, but other wheat-y beers would work well too.

I've only ever had catfish coated with a cornbread batter, not any saltwater fish. Cornbread gives a nice crunchy coating, for sure, with unique flavor.

If doing that, I'd probably make some hush puppies to go along with it.  Mmm...

Just starting to experiment with batters. I do think besides the great flavor beer brings to the table, also the carbonation to aerate and lighten the batter.

Can I suggest some Hollandaise sauce? You can get it store bought but it's not much trouble to make yourself and goes really well with fried fish.

Ooo, that sounds yummy! I have friends with chickens, and a neighbor with a lemon tree. Sooo good with fresh local eggs and lemons! Also worth a little more for the fancy Irish butter, especially for Hollandaise!
