Nice man!!! were you aboard the vision or the conception?? Did you go to Santa Cruz Isl? Dove off the Conception last weekend in aug for my first sheepshead, calico, and scallop those are some great boats!

I was on the Vision it's Truth Aquatics biggest boat. Yes we went to Santa Cruz, Santa Rosa and Santa Barbara Islands.

If you know how to prepare them they are as good as lingcod. Excellent eating dense white fish.

How do you prepare them?  My experience with them has always been a "mushy" consistency.

A lot of people have similar outcomes. My first ever sheephead about 15 years ago was butchered by my girlfriend at the time and because of that experience it was many years before I took another one.

People either love them or hate them. It's all in the preparation. My father in law prepares them in a clay pot in the oven Portuguese style. He also serves it deep fried with a seasoning mix, flour and corn meal mixture. It's all in the high temp of the oil. The fish comes out in nice firm hunks of goodness.

I make an awesome fish stew with the sheephead. I will be preparing a pot for my mom soon and will post the recipe and pics when I do.

I have a friend that goes on a similar trip every year with several guys and then has a bunch of folks over to his place for a seafood feast.  This year I was tasked with deep fryer duty.  He had Ling, Cab, and Sheephead... It made an excellent deep fry fish.  Most people at the party had no idea which fish was what.  It was all great... One of my personal fav's has always been ling, and the sheephead was nearly as good.
Never trust a man that doesnt like to fish...
