with a little elbow grease I can't imagine it would be too hard.  It should peel away from transducer after you scrape it off the inside of the yak.  The stuff is pretty much just silicone caulking.  You will need a new doughnut for sure.  Or use a piece of pool noodle.
Never trust a man that doesnt like to fish...

the first pic is an install I did the other day using a Madfrog Liberator arm on an eddyline Caribbean.
the second pic is a foam block I use to secure the battery. the foam is gooped in and holds the battery resally well. the batteries we use are already sealed and dont really need to be placed in a water tight box if the connections are done right.
the third pic is the battery in the foam inside the Caribbean. as you can see I trimed the bottom of the foam to better fit the hull design of the yak.
The fourth pic is the foam blocks I use for the transducer mount. it just recently started to come with a dsi transducer pad also. The precut  battery block is $5.40, and the transducer pads are $3.19.

a few more. i would place the transducer to the rear of the mast post with the battery in the front of the mast post, and all extra wires zip tied to the mast post.
