My wife is the ceviche maker...I kill, filet, freeze, thaw, cube and put in lemon/lime over night and then she drains in the morning, puts in fresh lemon and lime and then adds the rest of the goodies...tomatoes, red onions, jalapeno peppers, cilantro, salt...I think?
That's pretty much the same recipe I use.  I like to add some orange juice and a dash of olive oil.
