Ariel,

Sonny

Pretty easy, first I season the fillets with sea salt & crushed black pepper. Put it to the side prepare the marinade.

Marinade consist of Japanese ponzu sauce, acouple cloves of garlic crushed/diced, shredded ginger, & chop up the Thai chilis seeds and all. I like it hot so I add about 5 Thai chilis. Depending on taste I add a little more soy or lemon juice. Mix it all up.

I place one layer of filets down in a tupperware container, then drizzle a layer of the marinade making sure to get lots of the garlic, ginger & Thai chilis on the fillets. I lay down a second layer of the fillets down ontop of the first and repeat the marinade drizzle process. then drizzle on the rest of the marinade. Cover container and place in fridge and let marinade acouple hours.

When it's time to cook I set my lower oven to broil 475 to 525 degrees. Halibut doesnt take long to cook. Spread olive oil on my cooking pan, spread out the fillets minus the marinade cook for 12mins-17mins till you get a nice crispy brown on top of the fillets. Around the 10min mark I add in the rest of the marinade to cook up for the sauce.

End results is...............
