Anyone have any tips for proper launch and return times following the tides and wind patterns. Suppose to be NW to NNW winds. I assume its better to launch and return during tide changes (slack).

It shouldn't be a problem if you're going to the Carmel/Monterey area. In my experience, the fishing turns on after the tide peaks, but there are other factors involved too. If you go to Stillwater Cove, beware the shallow rocks straight out from the pier during low tide. The waves break over them and it can get dangerous (best to paddle around them to the south), especially at super low tides like Sat and Sunday afternoon.
I was paddling back to shore 2 years ago and didn't know the rocks were so shallow. A wave crested behind me and exposed a big rock right in front of me....no way to stop or go around it, so I rode the small wave right onto the rock. My kayak landed on it with a gnarly thud and I skipped right down it. Pretty scary and I could've been in trouble had I fallen off the yak in those rocks.

Tides can help the fishing at times, as does the moon phase and also the weather and many other factors (if you want to make it that complicated).
However I have always found that the best time to fish anywhere is when you can. That may change when I retire and have more time to go where and when I want.

some places the tide will dictate if the SHORE BREAKING WAVES are i.e.)right on shore or breaking farther out side(low tide) and many rows of white-water to paddle through.
Once you have a little experience, you'll realize that if you plan/wait and watch the surf for 20min+ There will be times to head out and times to easily return...if that window is not visible after watching for TWENTY MINUTES?...then you DO NOT want to attempt a launch there...I've also used a rule of thumb kinda thing.......if the swell is 6ft.or below= GO  if the wind is above 15knts= DON'T GO!

A good rule of thumb is: if the breakers are over the height of your head, you may be in over your head.

I really had no idea what to expect, but in the end it wasn't that bad. Shelter COve was pretty mellow. I had visions for a week of yardsale-ing all my gear along the coast coming in, agonizing about how I was going to get all that stuff inside for the launch and return!
