As for the other one, I'm not a huge fan of bitter melon, but after 30 years of wife trying to convince me, I'm slowly coming around...

Da bitter melon leaves are super bitter.  The bitter profile grows on ya’ cuz you sorta kinda know ish it’s possibly good for ya’?  Not sure why I’ve grown to tolerate then crave it…must be the rice… :smt005

Bitter melon . Couldn't be any worse than nopales ? :smt001

Guess ya gotta get your greens in where ya can.
I remember going on a health kick once and made a prickly pear leaf(nopales) juice, that was a slimy odd liquid that has a sour essence and kinda flows like mucus…the okra provides that slick rice sticking component.  Nopales is one of my ingredients in chili verde so it’s kinda buried but part of da yum… :smt006

Who knows, I might threddiejack my own thread and post the butterscotch pudding I need to make…with a side of liverwurst naturally and candied bittermelon nuggets…

Not sure if you are blanching your nopales before you add them to your other ingredients. It helps reduce the slime but I'm sure that is probably the healthy stuff getting washed out though. :smt001
