With crab season upon us, I figured I'd share one of my wife's absolute favorite recipes.  It's called crab dip, but could easily be considered crab salad.  We serve it with water crackers alongside and just scoop it into our faces until we're fighting over the last bite.  It would also do well served atop some butter lettuce.

1 lb fresh crab meat
1 can peeled, sliced water chestnuts, minced
4 scallions, thinly sliced
1 cup mayonnaise
3 TBSP soy sauce

Combine crab meat, scallions, and water chestnuts until evenly distributed.  Gradually fold in mayonnaise until the mixture just begins to hold together.  Add 2 TBSP soy sauce and combine thoroughly, adding more to taste.

Note: only use enough mayonnaise so that it just starts to hold together.  Less mayo is better in this one.

Crab, mayo, artichoke, onion and cheese.  Baked and served on sliced sourdough baguette.  Great for a cold evening.

I make one similar to this and it's fantastic. One of my favorite snacks (who am I kidding ... meals) during the winter and a fantastic thing to bring to holiday parties. Definitely recommend it.
