Less mess is good, and my way catches much of the juices in the carapace, since it's upright like a bowl the way I do it.  His way looks more like milking a cow - juicy.  Either way will get you there - he was picking at the gills and breaking off pieces of the mouth just like doing it the other way.  Anyway, my rant is over.   :smt001

Right!  Both ways are pretty similar, and Im not sure there is much difference.  Just a small variation I found interesting.  Much thanks buddy and hope you have a good winter season!
