Going to give beef jerky a whirl since I cant find the tough cowboy jerky I like anywhere I live and online, prices are outrageous. Anyone have a good recipe? Thanks!

Not sure if this is what you are looking for but it’s my favorite.  It’s a spicy teriyaki.
3 cups teriyaki marinade
1 cup siracha
1/4 cup liquid smoke.

You want a teriyaki that is a little runnier than most.  There is one at smart and final that works well.  If you are interested, I will send a pic of the bottle. Smart and final also carries large bottles of liquid smoke.  Marinade for 24 hours and then throw it in the dehydrator.
