My SO is spending time with me soon. She expressed a dire craving for Lingcod Tacos.

I’d like to make something from scratch without packets. And something different than the ordinary taco recipe. I looked through the first 15 pages and found nothing.

Anyone wanna share a secret recipe?

Try breading with crushed hot chicharrones instead of breadcrumbs.   I learned that trick from davethesynthguy and it’s awesome.

I like it grilled but with a nice dry rub -- i often use a blend of salt, chili powder, oregano and a little cayenne for kick. The toppings can make all the difference as well - traditional cabbage and white sauce is always good, but a good alternative is some curtido (the Salvadoran coleslaw you get with papusas).

Also, grill up your corn tortillas - it gives them a great texture and flavor.

Depending on how complicated and how oily you want to get, my go to for wow-level lingcod tacos is to coat fish sticks of lingcod fillet in a tempura batter, then roll in panko bread crumbs (with salt, pepper, and other seasonings in it), then pan fry in canola. Put that in a corn tortilla cooked over an open burner, some black beans, some spicy pico de gallo, a little shredded cheese, and a spoonful of  lightly watered down sour cream (watered just enough that it pours off a spoon smoothly). Serve with a wedge of lime on the side to be squeezed over the top just before digging in... My mouth is literally watering thinking of it...

No Packets as in no spice packets?

That's a shame, because McCormicks makes their Baja Citrus Spice packets, and it's amazing for tacos.  Little bit of oil, the spices little lime juice and it's delicious.

if you have an airfryer or a decent convection oven, I've been plopping it in the airfryer and the spice mixture has been giving the meat a nice crust.  This is what I usually do because the girlfriend doesn't eat Carbs, but cornmeal is awesome.

I like this recipe and add beer to the flour. Also add spices like paprika, onion powder, lemon pepper, whatever you like. Also I mix sour cream, mayo, little ketchup, lime, and paprika for a baha sauce.

I think everyone has covered some great recipes for prepping the fish - I tend to favor the dry rub and grilling that chopper mentioned.  One thing I would add is a favorite sour cream sauce that is simple to make:
~ 1 cup sour cream
~1/4 cup cilantro
juice from 1 lime

Blend in food processor till smooth.

I think everyone has covered some great recipes for prepping the fish - I tend to favor the dry rub and grilling that chopper mentioned.  One thing I would add is a favorite sour cream sauce that is simple to make:
~ 1 cup sour cream
~1/4 cup cilantro
juice from 1 lime

Blend in food processor till smooth.
Try tossing half of a garlic clove in there.

The sauce ideas are great. I think the condiments are just as important as the fish for a really good taco. You can also use non fat greek yogurt instead of sour cream as a healthier option. I also like making a sort of slaw mix for crunch with thinly sliced cabbage, onion, cilantro, lime juice and salt and pepper.

Not liking mayo that much, the sour cream and cilantro, with any additions you like is really good. You've gota have the cabbage though.
