I started using telecom scissors when I was back in the trades.  They will cut a penny in half or slice a finger to make you bleed and seem impervious to getting gunked/clogged up.  Immune to buds.   :smt044

I like to keep it simple ,one knife on my PFD, one knife for bait but this is my favorite.

I use Corona hand pruners. Easy to break down, sharpen and maintain. Great for gutting and getting those delicious collars off fish, splitting the heads for the BBQ.

I use a whetstone, WD-40 ,even better CorrrosionX ,on the blades to sharpen and spring.

I use hand pruners to cut up big fish heads for crab bait. Makes it so much easier to load up my bait boxes. I don't take them on the water though.

I’m a big fan of the Dexter Cut and Gut knife. Makes it real easy to process fish on the water. The spoon works great for removing salmon kidneys (that thick bloody strip along the spine).

My other favorite is the NRS Co Pilot knife, which I keep mounted to my PFD. This thing cuts bait, cuts line, cuts gills, and opens beers (although I prefer cans on the water...).
